gluten-free graham crackers

Gluten-free Graham Crackers! (Paleo option included)

Try these yummy gluten-free graham crackers.  Easy to make and great for the kids!

Ingredients

  • 1 cup Gluten-free oat flour
  • 1 cup almond flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • pinch salt
  • 1/3 cup honey
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil, melted measure after melting
  • 2 tbsp blackstrap molasses
  • 1 egg

Instructions

  1. Combine dry ingredients first, then add wet ingredients and combine thoroughly.

  2. Place dough on silicon baking mat or parchment paper.  cover with another silicon baking mat, parchment paper, or wax paper.

  3. Roll out dough to 1/8-1/4" thickness.  Thinner=crispier!  I personally roll mine out a to about 1/6" thickness.

  4. Using a knife or pizza cutter cut into 1”squares and pierce each square with a fork.

  5. Bake at 325 for 15-20 minutes (until golden brown, before edges start to burn)…allow to cool for a few minutes, then break them apart by going through the lines again with the pizza cutter. Or just do what I do, and rip them apart by hand. They will harden as they cool.
